Kitchen Supervisor/Sous Chef (Full-Time)

The Dominican Sisters~Grand Rapids are seeking a full-time Kitchen Supervisor/Sous Chef. This position oversees kitchen operations, assisting in the daily operation of the department in accordance with Health Department and licensing regulations and the policies and core values of the Grand Rapids Dominicans.

This position is 40 hours per week, every other weekend off. Weekly schedule consists of morning and evening shifts ending at 6:00pm, no late nights. This will also include some holidays.

Responsibilities

  • Ensures that nutritional and food service standards are maintained.
  • Maintains a hospitable, all-inclusive environment for residents and staff.
  • Supervises, trains, and orients all cooks and other employees working in the kitchen in collaboration with the Kitchen Manager/Chef.
  • Oversees all food and beverage deliveries and stocking inventory.
  • Assigns daily production worksheets to all cooks.
  • Ensures completion of daily prep work for next day’s production.
  • Assists in ensuring that department work areas, storage rooms, and equipment are maintained in a clean and safe manner and in compliance with regulations, through the monitoring of a daily cleaning list.
  • Collaborates with Kitchen Manager/Chef on performance reviews and corrective action, according to the Grand Rapids Dominican policies.
  • Works alongside staff to ensure all goals are met.
  • Assumes Cook and Kitchen Manager/Chef job duties as needed.
  • Assists in maintaining and updating all food service records.
  • Maintains updated knowledge of regular and therapeutic diets.
  • Assists Kitchen Manager/Chef with payroll monitoring and corrections.
  • Manages safety precautions as described in HACCP, local health code, and State.
  • Prepares work orders for maintenance issues in the food service areas in the building to maintain proper operation of systems and equipment, cleanliness, and aesthetics of the dining environment.
  • Practices good stewardship of resources through the responsible use of food, supplies, equipment, staff, and furnishings.
  • Participates in the Care-of-the-Earth vision by managing the process of using less material resources and by recycling.
  • Must be able to function independently as well as with a team, have a positive attitude and be willing to learn.

Qualifications

  • Degree in culinary or related field.
  • Must have 3 to 5 years of quantity food production experience, including cooking and baking.
  • Knowledge of therapeutic and special diets a plus.
  • Must have 1 or more years of supervisory experience in quantity food service, preferably in a licensed health care or eldercare setting.
  • Serve Safe certified.
  • Ability to operate various computer software and programs at an intermediate level such as Outlook, Word, Excel and proprietary programs.

Physical Demands

  • Must be able to lift, push, pull, and move equipment, supplies, etc., sometimes up to 50 pounds.
  • Must be able to stand 8 hours per day.

Job Hazards:

  • Subject to potential falls, burns, odors, and temperature extremes throughout the day.
