Dietary Manager

Aquinata Hall is a ministry of the Dominican Sisters~Grand Rapids. We offer holistic, restorative healing, healthcare, and residential services for seniors. Aquinata Hall is a Home for the Aged that is home to Sisters and lay residents where they enjoy the benefits of communal living, nurse, and medication support.

The Dominican Sisters~Grand Rapids are seeking a full-time Dietary Manager for Aquinata Hall. This position is responsible for the daily operation of the Aquinata Hall (AH) Kitchen and other food service areas of the building in accordance with Health Department and licensing regulations along with the established policies and core values of the Grand Rapids Dominicans.

Responsibilities & Duties:

  • Oversees the production of meals to AH residents ensuring timeliness and compliance with HFA, State, and local food code regulations and guidelines, along with departmental requirements.
  • Ensures proper portion sizes and nutritional needs are met.
  • Supervises the delivery of special diets including, but not limited to, dysphasia, diabetic, vegetarian, and dietary supplements.
  • Ensures meals are delivered on time according to all food safety standards and in an attractive manner.
  • Works in direct collaboration with the Aquinata Hall Administrator.
  • Meets and confers with residents and the nursing staff regularly to ensure maximum nutritional benefits.
  • Must maintain confidentiality regarding all resident information.
  • Maintains and updates all AH food service records in a well-organized manner.
  • Orders food from the Main kitchen.
  • Maintains a hospitable, all-inclusive environment for residents and staff.
  • Works alongside staff to ensure all goals are met and serves in a Dietary Aide capacity, as needed.
  • Interviews and trains staff, providing cross-training where appropriate.
  • Prepares work orders for maintenance issues in the food service areas in the building to maintain proper operation of systems and equipment, cleanliness, and aesthetics of the dining environment.
  • Practices good stewardship of resources through the responsible use of food, supplies, equipment, staff, and furnishings.
  • Participates in the Care-of-the-Earth vision by managing the process of using fewer material resources and by recycling.


  • High school diploma or high school equivalency; BA or BS in Food Science or nutrition a plus.
  • Successful completion of ServSafe and able to demonstrate understanding.
  • Ability to operate various computer software and programs at an intermediate level such as Outlook, Word, Excel and proprietary programs.
  • Must have three to five years of supervisory experience in quantity food service, preferably in a licensed health care setting.
  • Knowledge in quantity food production, including cooking and baking a plus.
  • Must have basic knowledge of therapeutic and special menus.

Physical Requirements

  • Must be able to lift, push, pull, and move equipment, supplies, etc., in excess of 50 pounds.
  • Must be able to stand and walk for extended periods of time and distances while carrying or pushing heavy items.
